Cesar Calle Cordova owns a 2-hectare farm that has Caturra planted on 1 hectare of the land. The soil in this area is very productive and rich with organic material to start; Cesar, like his fellow members of the Lima Coffees cooperative, is concerned with using ecologically sound farming practices, though his farm is not certified organic.
The coffee is picked ripe and depulped either the same or the following day, then fermented in open-air tanks for 25 hours. The coffee is washed three times, then dried on patios for about 15–20 days.
